The Cicchetti Tradition

Before diving into main dishes, you need to understand cicchetti. These small bites served at bacari (traditional wine bars) are Venice’s answer to Spanish tapas. Venetians stop for an “ombra” (a small glass of wine, named after the shadow of the campanile where wine sellers once set up) and a few cicchetti between meals.

1. Baccala’ Mantecato — Creamed salt cod whipped with olive oil until silky smooth, served on grilled polenta or crusty bread. This is Venice’s signature cicchetto and the hill every bacaro lives or dies on.

2. Sarde in Saor — Sardines marinated in a sweet-and-sour sauce of onions, raisins, and pine nuts. This dish dates back to medieval sailors who needed preserved food for long voyages.

3. Polpette — Venetian meatballs, smaller and lighter than their southern counterparts, often made with a mix of meat and fish.

Primi (First Courses)

4. Risotto al Nero di Seppia — Risotto made jet-black with cuttlefish ink. The ink adds a subtle briny sweetness that transforms the dish. Your teeth will be black afterward. This is normal and expected.

5. Bigoli in Salsa — Thick whole-wheat spaghetti with a sauce of onions and salt-cured sardines. Simple, powerful, and deeply satisfying. Traditionally served on Christmas Eve and Good Friday.

6. Risi e Bisi — Rice and peas, cooked to a consistency between risotto and soup. This dish was served to the Doge on the feast of San Marco (April 25) and uses the sweetest spring peas from the lagoon islands.

7. Pasta e Fasioi — A hearty bean and pasta soup, Venetian comfort food at its finest. Every family has their own version.

Secondi (Main Courses)

8. Fegato alla Veneziana — Calf’s liver cooked slowly with onions until meltingly tender. The Venetian technique of cooking the onions first until they practically dissolve into the sauce is what makes this version legendary.

9. Moleche Fritte — Soft-shell crabs from the lagoon, dipped in egg and flour, then fried crispy. Available only in spring and autumn when the crabs molt, these are a seasonal delicacy you cannot get anywhere else.

10. Schie con Polenta — Tiny grey shrimp from the lagoon served on a bed of white polenta. The shrimp are so small they are eaten whole, shell and all.

11. Branzino al Sale — Sea bass baked in a salt crust, cracked open tableside. The salt creates a sealed oven that steams the fish to perfection.

Dolci (Desserts)

12. Tiramisù — Venice and the Veneto region both claim this dessert as their own. The Venetian version uses zabaglione cream instead of plain mascarpone.

13. Frittelle — Fried dough balls filled with cream, zabaglione, or raisins and pine nuts. Available during Carnival season (January-February), these are absolutely addictive.

14. Zaleti — Cornmeal cookies with raisins, named for their yellow color (“zalo” means yellow in Venetian dialect).

Drinks

15. Spritz — The Venetian aperitif that conquered the world. The original Venetian spritz uses Select (a local bitter) rather than Aperol, mixed with prosecco and a splash of soda. Order it “con Select” for the authentic experience.
